Recipe: Homemade Marinated and Grilled Chicken

Ingredients:

• 500g boneless chicken (breast or thigh)
• 3 tbsp thick yogurt (curd)
• 1 tbsp lemon juice
• 1 tbsp olive oil
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tsp coriander powder
• 1/2 tsp cumin powder
• 1/2 tsp garam masala
• 1 tsp garlic paste
• 1 tsp ginger paste
• Salt to taste

Optional (for smoky flavor):

• 1 piece of charcoal + ghee (for dhungar/smoke infusion)

Instructions: Restaurant-Style Grilled Chicken

1. Prepare the marinade: mix in a bowl yogurt, lemon juice, olive oil, garlic paste, ginger paste, and all the dry spices. Mix well to form a smooth paste.

2. Marinate the chicken: Make chicken with the marinade, cover for at least 2 hours, and chill (overnight for the best taste).

3. Grill the chicken:

On stovetop: Heat a grill pan with a little oil and cook chicken pieces on medium-high heat for 5-6 minutes on each side until charred and cooked through.
In oven: Preheat to 200°C (390°F) and grill for 20-25 minutes, flipping halfway.

4. For smoky flavor (optional):

Place a piece of hot charcoal in a small bowl in the center of the chicken, pour a little ghee over it, and cover for 3–4 minutes to infuse a smoky aroma.

5. Serve hot with mint chutney, onion rings, and lemon wedges.
