Ingredients to make Chole Bhature:

For Chole:

  1. 1 cup chickpeas (soaked overnight)
  2. 2 large onions, finely chopped
  3. 2-3 green chillies, finely chopped
  4. 1 inch ginger, grated
  5. 2 cloves
  6. 2 cardamom
  7. 1 bay leaf
  8. 1 teaspoon asafoetida
  9. 1 teaspoon coriander powder
  10. 1 teaspoon cumin powder
  11. 1/2 teaspoon red chili powder
  12. 1/2 teaspoon garam masala
  13. 1/2 teaspoon dry mango powder
  14. Salt to taste
  15. Oil for frying

For Bhatura:

  1. 2 cups all-purpose flour
  2. 1/2 cup curd
  3. 1/4 cup water
  4. 1 teaspoon baking soda
  5. Oil for frying

Method to make Chole Bhature:

Chole:

  1. Put the soaked chickpeas in a cooker and let it whistle for 3-4 times.
  2. After the pressure of the cooker reduces, take out the chickpeas and keep them in a vessel.
  3. Heat oil in a pan and add cumin seeds, asafoetida, cloves, cardamom, and bay leaves.
  4. Add onion and green chilies and fry till golden brown.
  5. Add ginger and fry some more.
  6. Mix thoroughly after adding all of the dry spices.
  7. Add boiled chickpeas and mix.
  8. Cover, add water, and simmer for five to seven minutes.
  9. Hot chole is ready.

Bhatura:

  1. In a large vessel, add flour, curd, salt, and water and knead the dough.
  2. After covering the dough, leave it for half an hour.
  3. Knead the dough and form it into little balls after half an hour.
  4. Roll each ball and make it round.
  5. Heat oil in a pan.
  6. Put the rolled bhaturas in hot oil and fry till golden brown on both sides.
  7. Hot bhaturas are ready.

Garnish: Authentic Punjabi-Style Chole Bhature Recipe

1. Garnish with onion and green chilies.

2. Serve with lemon juice.

4. To make chole more delicious, you can add kasuri methi to it.

5. To make the bhatura fluffy, you can add a little baking powder to the flour.
