Ingredients to make Chole Bhature:
For Chole:
- 1 cup chickpeas (soaked overnight)
- 2 large onions, finely chopped
- 2-3 green chillies, finely chopped
- 1 inch ginger, grated
- 2 cloves
- 2 cardamom
- 1 bay leaf
- 1 teaspoon asafoetida
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon dry mango powder
- Salt to taste
- Oil for frying
For Bhatura:
- 2 cups all-purpose flour
- 1/2 cup curd
- 1/4 cup water
- 1 teaspoon baking soda
- Oil for frying
Method to make Chole Bhature:
Chole:
- Put the soaked chickpeas in a cooker and let it whistle for 3-4 times.
- After the pressure of the cooker reduces, take out the chickpeas and keep them in a vessel.
- Heat oil in a pan and add cumin seeds, asafoetida, cloves, cardamom, and bay leaves.
- Add onion and green chilies and fry till golden brown.
- Add ginger and fry some more.
- Mix thoroughly after adding all of the dry spices.
- Add boiled chickpeas and mix.
- Cover, add water, and simmer for five to seven minutes.
- Hot chole is ready.
Bhatura:
- In a large vessel, add flour, curd, salt, and water and knead the dough.
- After covering the dough, leave it for half an hour.
- Knead the dough and form it into little balls after half an hour.
- Roll each ball and make it round.
- Heat oil in a pan.
- Put the rolled bhaturas in hot oil and fry till golden brown on both sides.
- Hot bhaturas are ready.
